Hurry Up & In a Flash: Vegan, Healthy Dinner That My Kids Loved


Hey Moms,

I’ll keep this post short and sweet like my dinner tonight.  I’m going through an interesting time this week regarding food.  You see, my landlord has been quite relaxed in replacing my refrigerator and now that the ice cream in the freezer is more like a smoothie and I’ve been forced to eat out most days this week.  Needless to say, I’m not feeling my landlord right now ? BUT, you know me, I’ll make lemonade out of lemons any day (moms “winning” right?). So tonight, I pushed to find out what I could put together in a flash just working off my shelves and freezer (that still mostly works like a good fridge).

Here’s what I put together:

  1. Organic Brown Rice
  2. Organic frozen peas (from Trader Joes)
  3. Goya Black Beans
  4. Seasonings (which was clutch to this recipe): Himalayan pink salt, garlic powder, oregano, seasoning salt, apple cider vinegar (Braggs)

For the rice, I prepared as usual and just put some pink salt and a teaspoon of coconut oil in the pot.  For the peas, I put some seasoning salt in the pot while the peas cooked and another dash of pink salt after they were drained.  For the beans, I drained them and then added a half of teaspoon of oregano, garlic power, seasoning salt and a full teaspoon of apple cider vinegar and let them simmer for about 7 -10 minutes.

I impressed myself tonight!  Not only was it good enough for all of us to eat, but it was vegan and the girls liked it.  My oldest daughter gave me a thumbs up and said “thank you mommy for making a yummy dinner tonight.”  Sheesh — I don’t know if that means I hit it out of the park tonight or my other dinner nights suck…either way, tonight was a WIN!
